Alex Picks His Dinners

Alex Chalk seems to be following the outspoken style of one of his catering tutors Gordon Ramsay, by refusing to grant a place at the table of his 32-cover Brighton restaurant if he dislikes a certain diner.So far this has only happened once when he didn’t like the sound of a would-be customer who was trying to book on the phone for a meal at Alexander’s Gastronomy below the Townhouse Hotel (Maison Ville) in the Sussex resort.

“But it works both ways. Although we are only open for supper on weekdays, if I like someone I will open at lunchtimes offering them a private lunch,” says Alex who has 15 years of experience working with luminaries like Ramsay at restaurants such as the Ivy.

He is seeking to get people to see food in different ways by creating new textures. All ingredients are organic and fresh daily.
